First of all, no one had actually finished the game, because the devs are still working on biomes, more mobs & bosses, and other stuff.
However . . . If you've finished the currently available parts, you can:
1. Try to beat your best time.
2. Play around with building stuff.
3. Explore various seeds and post the best ones.
4. Play online. It's a completely new dynamic from single player.
5. Ferret out problems and report bugs and features that might be tweaked for better gameplay.
I'm NOT a dev, but these are the things I'll do once I finish a few playthroughs.
