I've been really tempted to pick this game up, especially with Steam's winter sale being on right now. The only thing that holds me back, and maybe you'll think I'm silly, is the character creation. It seems strange to me that they'd go to so much trouble to create such a beautiful world where you can build so many amazing things and then totally shortchange character creation. For reference, I'm used to ESO and Conan Exiles with mods. Both offer a lot of room to create fairly unique and beautiful characters. So does anyone know if there are plans to improve character generation? Are there mods that allow better, more flexible, character generation? Any information would be greatly appreciated!

No. Not at all. Can't speak to character creation. All I can say is this is an incredible game and you shouldn't let an aesthetic feature like this keep you from enjoying this once in a lifetime experience.
