I think all you have to do to make this game infinitely playable is to look through the ways people have already modded it and add the best mods to the base game. They could at least be options when starting a new map. I hope you consider doing this before the official release.

Remove the current ranged parrying effect but add a crystal buckler that reflects projectiles back at the caster to stagger them.
This makes the staggering ranged mechanic more logical and makes bucklers more appealing in the late game.
